I’m not really labor, I just play labor in the daytime.
Substance is a blend of allegory, essay, and poetry about Work. It culminates as a proposed labor model for a fictitious business. The book is set in New York dining rooms, 2011-2015.
The main character, The Famous Food Runner, developed as a joke about celebrity chef culture in New York. What if other previously unrecognized talent on the floor suddenly became famous for their strange and specific skills?
It’s not a restaurant tell-all. It’s a wandering examination of the ubiquitous Work hours that we all attend to. (Note from the author: ‘industry people will get it.’)
